Heating methods and programmes

The appliance offers hot air with selectable humidity from 0% to 100%, grill with circulated air, two grill levels with humidity, sous–vide cooking and low temperature cooking. Additional functions include dough proving, keeping warm, defrosting and regenerating. Up to 200 automatic programmes with setting recommendations are available, and up to 30 favourites can be saved for quick access.

Handling and usability

• Cushioned side–opening door with electronic door opening and user detection with adjustable distance.
• Full touch display with stainless steel control ring, info texts and animated quick guides to assist operation.
• Timer functions including cooking time, cooking time end, count–up timer and long–term timer with pre–programmable heating cycles.
• Programmable automatic door opening at cooking time end to help avoid overcooking.

Steam and moisture management

• External steam generation with automatic boiling point detection.
• Functions for misting and steam removal.
• Automatic drying of the cavity at the end of the cooking process and a dedicated drying programme.

Cleaning and maintenance

The oven features a hygienic stainless steel cooking interior with automatic cleaning designed to provide perfect results, including for heavy soiling. Automatic descaling is provided for the steam generator. All removable parts and accessories, including the stainer filter, are dishwasher–safe. Descaling tablets can be ordered as a special accessory under Part No. 17002490.

Digital services (Gaggenau Home Connect)

• Remote control and monitoring of the appliance.
• Software updates.
• Cooking time estimation when using the core temperature probe.
• Door opening via voice assistant.

Planning and installation notes

• Plan the niche without a back wall and do not install other electrical appliances above the oven.
• Avoid protruding front panels, horizontal handles or high cabinet tops directly above the appliance.
• Ensure the edge of any worktop above is steam resistant.
• The outlet hose must be positioned lower than the bottom edge of the appliance and at least 100 mm lower than the appliance outlet.
• The inlet water connection and outlet hose connection to the siphon must remain accessible and not be directly behind the appliance.
• For corner installations, ensure sufficient distance to the wall for the side–opening door.
• The mains socket must be accessible and outside the built–in niche.
